This is a wonderful and simple Kicharee recipe from Essential Ayurveda.
Kicharee is a wonderfully balancing meal that is suitable for all body types. It is very light, easy to digest and is very nourishing.
You will need:
1 cup basmati rice
½ cup split mung beans
5-6 cups of water
1 tsp grated, fresh ginger
2 tsp ghee
½ tsp coriander seed powder
½ tsp turmeric
½ tsp cumin powder
½ tsp cumin seeds
½ tsp mustard seeds
1 pinch of hing (asafoetida) or ½ tsp of Hingwastak powder
½ tsp garam masala powder
½ tsp rock salt
Chopped fresh coriander leaves.
Put the rice and mung beans in a sieve and rinse under cold water until the water runs clear. Add 5-6 cups of water to a pan and add rice and dal and bring to the boil. As it reaches boiling skim off the white froth on the surface of the water. Add grated ginger, cover and simmer gently until the dal becomes soft. Meanwhile, warm the ghee in a saucepan. Sauté the mustard seeds, cumin seeds, hing, cumin powder, coriander powder, garam masala and turmeric for a couple of minutes. Stir in the sautéed spices to the half cooked rice and dal and continue simmering until ready. Add salt to taste and fresh coriander leaves before serving. Perfect for post-seasonal indulgences!
